I have installed and activated the Plugin "SR Forum Site Icon"

This was the read me included:

Instalation:
0. download package with plugin and language files
1. upload inc folder into your MyBB installation directory
2. goto ACP, install & activate plugin

Description:
Plugin adds custom site icon to address bar in web browsers.
It is using base64 string representation of images.

Installation adds settings to your database.
Activation only switches the plugin on/off.
Warning: plugin works with web browsers, not with text IEditors.

1. pliki z paczki wypakować do odpowiednich folderów (struktura
jak w paczce)
2. zainstalować/aktywować w ACP

Opis:
Plugin pozwala na ustawienie ikony, która będzie wyświetlana na
pasku adresu w przeglądarce. Używana jest reprezentacja obrazków
jako stringi w formacie base64.

Instalacja dodaje ustawienia do bazy danych.
Aktywacja włącza i wyłącza plugin.
Uwaga: plugin współpracuje z przeglądarkami internetowymi, a nie
z IEdytorami tekstu.

How do i change the icon now that it's installed and activated?

[SOLVED] you do it in configuration settings in the admin cp, i ended up using another plugin [Favicon 1.1]

I don't know this plugin, sorry. Watch out for the linked image and try to replace it.
